Responsibilities,
- Execute the daily production of artisan breads, rolls, croissants, danishes, and other specialty bakery items according to standard recipes.
- Ensure that all products meet the established standards regarding taste, texture, appearance, and size.
- Monitor and control oven temperatures, humidity, and baking times to ensure perfect results for different types of dough.
- Follow precise measurements and techniques (scaling, mixing, proofing, and shaping).
- Oversee the work of Commis Chefs and Bakery Assistants, ensuring they follow instructions and maintain productivity.
- Coach junior staff on baking techniques, equipment handling, and safety protocols.
- Monitor inventory levels of flour, yeast, butter, and other raw materials. Prepare requisitions to prevent shortages.
- Maintain the highest standards of food hygiene and kitchen cleanliness at all times.
- Ensure all bakery machinery (mixers, provers, ovens, slicers) is operated safely and maintained regularly.
- Assist the Pastry Chef/Executive Chef in creating new seasonal items or improving existing recipes.
- Minimize production waste and optimize the use of ingredients to maintain food cost targets.
Requirements
- Diploma in Culinary Arts, Pastry & Bakery, or equivalent professional training.
- Minimum of 3–5 years of professional baking experience, with at least 1 year in a supervisory role (Demi-CDP or Senior Commis).
- Proficient in bread science, sourdough fermentation, laminated doughs, and high-volume production.
- Ability to stand for long hours and lift heavy loads (e.g., flour sacks) in a warm kitchen environment.
- Willingness to work early morning shifts, weekends, and public holidays.
- Strong attention to detail, time management, and the ability to work under pressure.
- Proficiency in MS Office (Word, Excel, PowerPoint).
